Ingredients

1/4 cup extra-virgin olive oil

2 Tbsp. Champagne vinegar

1 Tbsp. fresh lime juice (from 1 large lime)

1 Tbsp. honey

3/4 tsp. kosher salt, plus more to taste

1/4 tsp. freshly ground black pepper, plus more to taste

2 lb. seedless watermelon (without rind), cut into 1-in. cubes (about 6 cups)

1 cup thinly sliced red onion (from 1 large red onion)

1 [6-oz.] block Greek feta cheese

1/4 cup fresh mint, roughly chopped (from 1 [1-oz.] pkg.)
Directions

Make dressing:
Whisk together first six ingredients in a small bowl until well combined.

Toss watermelon and onion in dressing:
In a large serving bowl, gently toss watermelon, red onion, and olive oil mixture together.

Add cheese and additional toppings:
Crumble feta cheese over cheese over top.

Sprinkle with mint. Season with additional salt and pepper to taste. Serve immediately.
