This easy chicken thigh marinade is made with orange juice and shallot and comes together quickly for dinner tonight. With the addition of chili-lime seasoning, you add a subtle kick of heat, and honey mustard adds the perfect touch of sweetness, while helping the marinade cling to the chicken thighs. Don't feel you must use this marinade on chicken alone—it would be great with pork. If you use it for shrimp, you should limit the marinade time as citrus juice can make the shellfish tough and stringy.

Ingredients

  • 1 cup orange juice

  • 1/4 cup finely chopped shallot

  • 2 1/2 Tbsp. chile-lime seasoning (such as Tajin)

  • 1 Tbsp. honey mustard

  • 1 tsp. salt

Directions

  1. Mix ingredients:

    Combine all ingredients in a medium bowl.

  2. Marinate chicken:

    Add the chicken thighs to the marinade. Chill in the fridge 6 to 8 hours, and cook to your preferred style.
