Millionaire Bacon BLT Puts All Other Sandwiches To Shame

Is there a way to make the classic BLT even better? We certainly think so—and we nominate this iteration as the best there may be.

For this millionaire bacon BLT, the bacon is crisp and candied, but plenty of the smoky-savory bacon flavor still shines through. Lightly toasted bread keeps the sandwich from falling apart (and isn't so hard that it cuts the roof of your mouth).

Make sure to line the sheet pan; some of the sugar coating will run off with the bacon fat onto the pan and create a sticky, molten mess. Also, be sure to allow the bacon to cool for 10 minutes before building the sandwiches; the candied coating firms up and the bacon crisps up more during that time.

Ingredients

  • Cooking spray

  • 1/2 cup packed light brown sugar

  • 1 1/4 tsp. ground black pepper, divided

  • 1/4 tsp. cayenne pepper

  • 8 slices thick-cut bacon

  • 6 tomato slices

  • 1/4 tsp. kosher salt

  • 6 Tbsp. mayonnaise

  • 4 slices sourdough bread, lightly toasted

  • 4 lettuce leaves

Directions

  1. Preheat oven to 375°F. Line a sheet pan with foil or parchment paper. Arrange an oven-safe wire rack inside the pan; coat rack with cooking spray.

  2. Combine brown sugar, 1 teaspoon black pepper, and cayenne pepper in a medium bowl, stirring well to combine. Arrange bacon slices evenly on prepared wire rack. Sprinkle sugar mixture evenly over bacon slices; pat gently onto bacon to form an even layer of sugar coating. Bake at 375°F until bacon is browned and crisp, about 30 minutes, rotating pan after 20 minutes. Remove pan from heat and cool bacon on rack for 10 minutes (it will crisp more as it cools).

  3. While bacon cools, arrange tomato slices in a single layer on a layer of paper towels. Sprinkle evenly with salt and remaining ¼ teaspoon black pepper, and let stand for 10 minutes. Spread 1 1/2 tablespoons mayonnaise onto one side of each toast slice. Turn 2 bread slices mayonnaise-side up; top with 2 lettuce leaves, 3 tomato slices, 4 bacon slices, and remaining 2 bread slices, mayonnaise-side down.
