Also in the mix is coconut, as well as yogurt and milk for a nice creamy texture, and fresh lime juice for tartness. While frozen pineapple is always super sweet and delicious, same with frozen strawberries—which were frozen when in-season and ripe—if you can find fresh ones, we highly recommend using them for a lovely candy-like sweetness and pink color. Ingredients 2 cups frozen pineapple chunks (from 1 [10-oz.] pkg.) 1 1/4 cup coarsely chopped frozen strawberries (from 1 [10-oz.] pkg.) 1/2 cup plain or vanilla whole-milk strained (Greek-style) yogurt 1/2 cup unsweetened coconut milk or almond milk 1/4 cup sweetened flaked coconut 2 Tbsp. fresh lime juice (from 1 lime) Directions Process pineapple, strawberries, yogurt, milk, coconut, and lime juice in a blender until smooth, about 1 minute. Serve immediately. Rate It Print
